Four steps
How malatang works
Malatang is street food from northern China: a bar of raw ingredients, a scale and a pot. It works here exactly the same way.
Four steps
How it works
The first time is mildly alarming. The second time you walk straight to the bar.
-

Coge un bol
En la entrada, junto a la barra fría. El bol es grande a propósito.
-

Llénalo
Verduras, setas, carne, bolas, fideos. Sin carta, sin límite, sin pedir permiso.
-

A la báscula
Se pesa delante de ti. Pagas los gramos que has puesto, ni uno más.
-

Elige el caldo
Ocho caldos, del hueso suave al Chongqing. Lo cuecen y te lo llevan a la mesa.

Build a bowl
Tap the ingredients. The scale climbs with you. Watch what happens to the broth when you pass 500 grams.

Now the broth
This is a simulator. The per-portion grams are our own estimate and the price per 100 g is still to be confirmed with the shop: the scale on the counter is the only one that counts.
What people usually ask
What does a bowl cost?
It depends what you put in it: you pay by weight. A bowl of vegetables weighs less than one loaded with beef and fish balls. Diners report a figure around 2,39 € per 100 grams, but ask at the counter for the current price.
Is the broth charged separately?
Only if your bowl weighs less than 500 grams — then it is 2 €. From 500 g up it is included. It is written on their own sign by the door.
How much is 500 grams?
Less than you think. A bowl with vegetables, mushrooms, noodles and some protein clears 500 g without trying. The simulator on this page will give you a feel for it.
Is it very spicy?
Exactly as spicy as you want. Two broths have no heat at all — the bone broth and the tomato one — and it climbs from there to Chongqing, with beef tallow and serious heat.
Can I eat here without any chilli?
Yes. Ask for the beef bone broth: it is the house base and there is no chilli in it.
Is there a vegetarian option?
The bar is open: you can fill the bowl with nothing but vegetables, mushrooms, tofu and noodles. The broth, though, is beef bone in almost every case — ask at the counter before you choose it.
Can I book a table?
No. They say so themselves on Instagram: no bookings. You turn up, take a bowl and start.
Which day are they closed?
Tuesdays. The rest of the week, 13:30 to 23:30.
